Fun Fall Treats

Fall is here and that means it’s time for all the various fall treats and ingredients to hit the shelves of your local store. It’s time to get in the kitchen and make yourself some fun fall treats! In this week’s Laguna Place Blog, we’ve got a few recipes for treats you could have during this wonderful season. These treats may involve a lot of pumpkin, so get yourself ready for that! 

Crustless Apple Pie

  • 6 large baking apples, halved vertically and cored

  • 12 tbsp. butter, melted

  • 1/3 c. sugar, plus more for sprinkling

  • 2 tbsp. ground cinnamon

  • 2/3 c. old-fashioned rolled oats

  • Vanilla ice cream, for serving

  • Warm caramel, for drizzling

If the apple filling is your favorite part of the apple pie, don’t miss out on this recipe that cuts out the crust, literally. As the recipe says, pair it with some vanilla ice cream and warm caramel to add the extra kick! 

Pumpkin Cheesecake Muffins

Dry Ingredients

  • 1 ½ cups gluten free flour blend (can sub for oat flour)*

  • ½ cup coconut sugar

  • 1 tsp baking soda

  • 1 tsp baking powder

Wet ingredients

  • 1 large egg*

  • ½ cup Greek yogurt (I used Chobani 0%)*

  • ½ cup milk of choice (I used Unsweetened Almond milk)

  • ½ cup mild tasting nut butter of choice (I used almond butter)

  • ½ cup canned pumpkin (not pumpkin pie filling)

Cream cheese filling

  • 3 T cream cheese, softened*

  • 1 tsp pumpkin pie spice

  • 1 tsp coconut sugar (can sub for brown)

Looking for a quick bite? These pumpkin cheesecake muffins are going to be perfect to pick up and pop in your mouth! Since these are fairly small, they’re a great treat for the kids!

Pumpkin Spice Bread

  • 3 cups sugar

  • 1 cup vegetable oil

  • 4 eggs, lightly beaten

  • 1 can (15 ounces) solid-pack pumpkin

  • 3-1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon ground cloves

  • 1/2 teaspoon ground allspice

  • 1/2 cup water

Cut yourself a slice of this delicious pumpkin spice bread. Pair it with a cup of coffee or hot chocolate to round out the experience.
